Hello Matt,
You could group add-ons by using a quantity based add-on.
You could keep track of the number of add-ons used by your customer at your end and when they have exhausted their usage or need more units then you could request them to attach an add-on to their subscription while mentioning the quantity of add-ons used.

Our customers could be adding a large number of addons to their subscription each month so I wanted to know if there is a way to group the addons together eg.

This is how it appears in the chargebee portal but would also appear on the invoice...if someone were to add hundreds of addons a month it would be a very long invoice!
